Sad Apple Pie

Here's the recipe this time ;) PS this pie won't make you sad, and it's just a baby pt. 2 to my last post.



While I don't like eating pies, they are fun to make, and this one, in particular, is delicious.


Pie Crust

This pie, it requires a double crust. Either a lattice or full top works!

I found this recipe in my mom's old cookbook from the 90s, and it works like a charm.


2 cups all-purpose flour

1/2 teaspoon salt

2/3 cup butter (I prefer lightly salted)

6 to 7 tablespoons cold water


In a food processor, mix flour and salt. Slowly add in small pieces of cold butter until evenly mixed. Transfer to a medium bowl and slowly add a tablespoon of water, using a fork to mix in sections until fully incorporated. Lightly flour a smooth surface and gently knead the dough into a ball. Divide into two equal portions. I like to leave these in the fridge while I make the filling.


If you don't have a food processor/don't want to have even more dishes, you can always use your hands instead!


Spiced Apple Pie Filling

3-4 Honeycrisp apples, peeled and thinly sliced

2/3-3/4 cup granulated sugar

Cinnamon

Ground Nutmeg

Allspice

Juice of 1/2 a lemon

One egg, for an egg wash


After peeling, coring, and slicing the apples, add them to a bowl with sugar and spices. I start on the lighter side for both and add more as needed. Add lemon juice and stir well. Let this sit for about 10 minutes, letting extra juice and sugar settle at the bottom.


Assembly

Preheat oven to 375.


Roll out both crusts and use one to line a pie tin. Use a slotted spoon to transfer apples, reserving the sugar and juice at the bottom of the bowl. Add the second crust, if not using a lattice-style top, be sure to cut slits to vent the pie. Seal the edges and remove excess crust before brushing on egg wash.


Loosely cover with tin foil to prevent burning. Bake covered for 25 mins, uncover, then cook for 25-30 (until golden brown). Let cool before serving.


Optional: Using the leftover juice from the sugared apples, add powdered sugar and stir until it forms a glaze. Pour over slices and enjoy.
